Rainbow Popsicles

Now that the sun is out, what better way to cool down than with a healthy rainbow ice popsicle! These are packed with goodness and are easy to make, plus your kids will (hopefully) love them! 

There are lots of popsicle moulds around but I particularly like this one


All you need to do is choose some colourful fruit. We like blueberries, raspberries, kiwi and mango but you could add anything you like really! 

Using a nutribullet or blender, blend each fruit separately with water (except  kiwi which doesn’t need anything adding to it). Depending on taste, you could also use coconut water or almond milk. Keep each fruit purée in a bowl and add to your lolly moulds! ( rinse out blender between each different fruit) Add one layer, freeze for 10-15 mins then add the others layers the same way until you have filled up the moulds. Freeze for 2- 3 hours et voila! 🌈🍉🍓🍋🍊🥝
